The books of vegan cuisine are not many in France, which is why it can be very useful to those who want to always or occasionally do without animal products while exploring a wide variety of flavors: revenue, although presented and illustrated, going from breakfast to dessert through the full range of soups, salads, cereals and legumes, and are taken more often to different world cuisine, the Mediterranean and Asia. Variants are shown each time. It is true that the ingredient list is sometimes a bit long (especially spices and condiments) but firstly they are generally well known vegetarian or organic enthusiasts, and secondly there is no reason to simplify a little the recipe if desired, without losing its interest. Note: most of the recipes are authentically Vegetar / turbines, that are not catered for by the various substitutes where tofu replaces meat; soy is present but very reasonably. We find an index by components at the end of the book.
