Short the positive properties (the notes follow below):

Model Description:
The model, however, does not correspond to the picture that was shown at the time of my purchase. The product delivered to me there in the middle of a weißgeriffelte thumbscrew with the white platen roller simply be adjusted in their distance from the cutting wire. Therefore, I have uploaded a photo showing the mechanics in close-up.
Adjustment mechanism:
The type of adjustment - with just one adjustment screw - is much more elegant than the version in some competing products, in which the roll with two axis bolts must be adjusted by the wire fixing the left and right.
Cutting wire:
The cutting wire is quite thin, but very strong, which has the advantage that it slides easily through the cheese, as with thicker wire sizes. Also, the wire can be easily replaced, or tighten, if that becomes necessary, as it is simply wrapped only around the two fixing screws and is tightened with these. (See the Addendum dated 04.19.2015 - below)
Previously I had a model, were welded at the ends to the wire metal beads. After one was demolished them, I was not a spare part and had to throw the hook. In this model, here you can practically use any wire, which is a distinct advantage.
Addendum (04/19/2015) - Replacement of the cutting wire:
This week is torn after 9 months of intensive use for the first time the cutting wire, after having tightened again after about 6 months before. Since there are no spare parts of Birambeau at Amazon, I have chosen a very simple but effective solution: I used a guitar string. This gets you individually at any music store. My cost less than one euro! In addition, you can loose produce 5 cutting wires from a string. I used a B-string for an electric guitar with the thickness 0.013. This is a little thinner than the original wire. But since I mostly cut young Gauda, which is quite soft, which was the right decision for me. The thickness of original wire corresponds alledings better a G string of starch 0017, (= 0.43 mm). Have a second photo with the pack of guitar string uploaded. The change is very simple: One end of the string with a pointed pliers turn to a small circle and tighten it with one of the two Srauben the tailor. Then tighten the string on the cutter and wrap around the second screw. Tensioning, screw, pinch back excess wire with diagonal cutters - done!
Conclusion:
Great device, the cheese cuts very well, is easy to use and the spare parts issue is very inexpensive to solve. Has full 5 star worthy.
