Having no real knowledge in the kitchen, I found this great book given simple explanations, supplemented by explanatory diagrams of a very nice drawing, unpretentious. Professionals are perhaps not get their money because they know certainly all these explanations, but for novices like me, this is finally the kind of book I was looking for. Of course, recipes, there are provisions in full everywhere. But why proceed in an order over another, why cook food in a certain way rather than another, why ... In short, very happy with my purchase. Minor drawbacks though: the kitchen is as wide area. Y should be more even if this book already has many ... Desserts, themselves, are not addressed ...
