Here's a waffle recipe I love (waffle soft inside and crispy on the outside) and that does not stick:
500g flour
5 eggs
65cl of milk
25cl beer
60g butter
30g sugar
Separate the yolk and egg white.
Mix flour, egg yolk, milk, melted butter and sugar in a mixer with a max speed whip for 10 minutes (yes for 10 minutes because Ca helps to aerate the dough).
Add 25cl beer and whisk for a further 5 minutes.
Then mount the egg white and mix the egg white with the dough by hand and gently.
To cook properly in this waffle:
- Put the dough in the waffle iron
- Close and do not open it until the orange light goes out,
- Normally when you open the waffles come off by itself.
- You can do the following waffle without putting oil
The greedy can smoothly enjoy their waffles immediately, patients can wait 12h for even better waffles.
