I was afraid to find lots of soy and tofu but actually not, it is used of course, but rather moderately. several recipes of foreign dishes, many spices but nothing very complicated. Some have criticized the multitude of ingredients. But these are in fact already many ingredients used by those who cook without animal protein. it is one of the best books I could find at this time to cook vegan and at a more than reasonable price. I recommend.
