The object is beautiful: its green clean design, the bright red interior with magnetization in the space provided to the blade, the knife ... well proportioned seen qu'Evercut did not neglect the visual.
In use:
The blade has a cutting edge actually quite satisfying, even for demanding users like me, accustomed to the range of Japanese knives (Global in this case). The knife is well balanced, the handle allows a good grip, it has an undeniable quality feel with this item. A fun knife so that will do wonders in many situations. It is particularly comfortable with foods with texture 'soft', but proves less efficient on farms foods: indeed, its very thick blade deviates significantly both parts of what is cut, often causing break of less deformable foods (carrots or fresh zucchini for example) before the blade has finished crossing. It does not matter but when used to work with narrow bladed knives, it's confusing and frustrating, and it makes it less steady movement.
In summary a great nice sharp knife, but with a slightly thick blade that interferes with cutting certain foods. From the perspective of the pleasure of use, this knife is very good, but is in my opinion a step below Japanese knives (type Global), even if they require maintenance, which I will address below.
The interview:
This knife is a marvel of technology because the edge of the blade is coated carbide laser-cut (according to the supplied leaflet). This technology ensures longevity that no sharpening steel or any ceramic blade can not reach. Fini sharpening stones! Note however that this requires, as with all quality knives, that you be careful, and this does not exempt you to cut only on soft surfaces (wood, plastic), and in any case in ceramic plates, glass ... which will damage the blade quickly. It is also unwise to touch the bones when the meat is cut and, more generally, from hitting any hard object (covered ...) directly with the cutting edge. This forbidden to store this knife in a covered pit, and if you do not have a wooden knife block, its case will remain essential to protect the well between uses.
It remains to see if the behavior in time is really as fabulous as promised, knowing qu'Evercut agrees to sharpen your knife free désaffûté (for normal use) that you would send him.
Summary:
Excellent product, beautiful, elegant, high quality, but still a little behind at pleasure to use compared to other products in the same price range.
