This is my favorite sharpener to sharpen my kitchen knives in stainless steel (mainly my paring knife) I find it easier to use than a stone knife or a gun. I feel less risk of damaging my blade: with this one I really sharpens the sharpened part of the knife (the blade wire).
I have a domestic use of this sharpener and my knives. I do not cut bone with my knives and my blades are not damaged. I sharpened when I find them less sharp.
