For Schinkenräucherung I use Räuchergold flour, which burns down nice and slow in saving fire and when it presses well and does not run out. The smoke is aromatic, as it should be when carrying flour. Already have two other varieties tried that have not smouldered so beautiful. But now I have the best for me Räuchermehl found.
