1- Our Story: The story of Ben & Jerry's company since their first small ice cream shop, very pleasant to read. Obviously, the story stops before the pair will sell their business to the multinational Unilever.
2 Ice Cream Theory: Some explanations on the composition of the ice, texture, and tips and tricks for always successful.
3 Recipes: The bulk. It begins with the basic recipes of ice cream, and then presents the Ben & Jerry's flavors that have had the most success. Then come the recipes of chocolate ice cream, fruit, and those that had their origin in their small shop. Then come the ice candy, cakes, cookies and chocolate bars, sorbets, cakes recipes (Ben and Jerry were not going to let you get an ice cream brownie without giving you their brownie recipe!), The sundaes, the sauces pour over ice and drinks. OUF!
Some ingredients, particularly in confectionery, are not found in France but it is easy to imagine what would replace them. There are no pictures (a picture of a ball of ice does not add much to the already sumptuous recipe), but pretty illustrations in pastel colors. The book is written in a very nice and familiar style encourages the reader to try its own revenues. It is very complete, I do not think I need to buy another one before long.
