Real molds with old, very heavy and very thick with whom made real canelés! If you have the right recipe they will perfect the texture crisp, caramelized exterior and soft interior of the canelé. I tried with silicone molds, and the result is really worse. These copper molds are expensive is some, but they all keep a life and may even happen (such as receipts) from generation to generation. Only small problem, despite that I put the butter in pan before pouring the device, they stick terribly and make it very dangerous and random release ... Advice? ... I need a spray lubricant but not easily find commercially.
