This book contains many basic recipes that more developed and innovative recipes. Valerie Cupillard gives several tips and techniques for replacing such ingredient such other (how to replace an egg in a cake, for example). This book mainly targets obviously people intolerant to gluten and dairy products, but the recipes are simple, delicious and quite achievable by all (including non-intolérents, although some ingredients are not necessarily in all closets kitchen). In short, I am fully satisfied with this book I recommend to all!
