Had me before that the two Santoku knife bought and my expectations were fully met. This knife should I use to peel and small, precise cuts where necessary. Overall, I can say that I run 90% of all cutting work with Kai Europe SHUN knives. Previously, I had the Damascene knife from Solingen HGS used which is not bad, and of course price (there is at Aldi and Lidl) are much cheaper, but the sharpness and durability of this Kai knife is unbeatable.
