Because France has a good delay of two or three decades on some of its European neighbors in terms of vegetarianism, we need books like this one in our beautiful country, to change our mentality and culinary fight against lobbies of industrialized agriculture. Not the book does not necessarily need to be searched, as was written in another review, it would quickly become the philosophical and intellectual jargon incomprehensible to ordinary mortals. It is part of a healthy approach which incorporates the merits of vegetarianism (the health point of view, ethics, and ecology), without seeking to climb the different diets against each other. This book will give arguments and heartened to all beginners vegetarians still a little hesitant to assert their difference every day. "Yes, the vegetarian's boring I know whereof I speak, I am one for twenty years.": From the foreword, the tone is set.
