The wheels perfectly cut the pasta dough. A single pass is sufficient. The adjustable width allows dadapter cut-out size, thus defines the size of the ravioli. In addition to a ravioli maker, it serves primarily to follow the line defined by the cutting machine, which can vary depending on the direction.
Note that the "buttons" are plastic clamp. No screws, but the "buttons" above. In the photo you would think it is a metal alloy, but plastic. This is not a problem because all seems solid first touch and use.
