What yeast extract has really to do with glutamate? Senseless and unfounded hysteria - my opinion!
Difference of glutamic acid and glutamate:
- Glutamic acid: is a naturally occurring amino acid that is usually present in bound form in foods.
- Glutamate: is the generic term for the salts of glutamic acid.
A distinction is the naturally occurring glutamate and glutamate used isolated manmade.
- Naturally occurring glutamate is the salt of glutamic acid which is found naturally in foods.
- Man-made Glutamate: is obtained biotechnologically often isolated by microorganisms. It is usually added in the form of monosodium glutamate-in conventional foods as a flavor enhancer and is identified as such in the list of ingredients.
Glutamic acid and glutamate in the yeast extract:
In yeast extract are the glutamic acid and glutamate as in other foods, the natural compound and are therefore not comparable to the addition of the isolated glutamate artificially produced.
