Much more convenient than conventional beans through being cooked, annealing and re-annealing spread an odor to the dough. It should of course insert a sheet of parchment paper (baking paper) between the dough and the balls before they start cooking the dough ... otherwise we will end up with a dough dotted with small "holes" unsightly!
