This pan makes every normal Teflon pan seem like children's toys. For deliveries it had destroyed the package in which it has been sent, but even gotten no scratches. The stem is very sharp and irregular by the Hammerschlaege in expelling. Only after filing and shaping and polishing could keep the pan with his bare hands, without intersecting. After baking, it has on the gas stove but really unique features: on a high flame brings incredible, brutal heat for searing; even on a low flame the Waermeverteilung is very uniform. It remains really no remnants from the ground; and you can work with metal tools in the pan without damaging the patina. The relatively rough surface seems to keep the patina very well. The stem itself is on the gas stove long enough for two-handed use with no burns (after filing the smooth edge that is even quite comfortable, see above).
Conclusion: On the gas stove no other material comes close to this pan when extreme heat is needed. Even cast iron conducts heat much worse than wrought iron. If you have used this pan again, one wonders why Teflon pans are ever sold. I wanted to give 4 stars because of the sharp-edged handle, but I still decided to weigh the rest functional properties 5.
Another tip to 'burn': The included instructions describe exactly what to do in order to apply the first patina. What is stressed is not good enough, is: The fried food has really really black burn! Without smoke no patina! The best way to the open air on a disposable barbecue, then there no problems with the fire brigade :-)
