Rinsed well they are the perfect noodle substitute in so many low-carb diets. Before I start with the cooking, once the noodles are served in a colander, rinse with cold water and let them by then lying in the cold water and repeat the process so 2-3 times during cooking.
You can see the consistency and the "taste" (they have no intrinsic flavor) compared with glass noodles, so you need a good gravy to it.
