The SJ-250, I use only for knives - anything but the normal (cheaper and less sensitive) disc. With the SJ-250 disc kitchen knife (assuming good steel and proper grinding angle) to razors. However, I bow in the direction of rotation - not as declared. Thus, the blade can not dig with a lapse in concentration in the stone and the knife is as sharp (just takes a little longer).
