This book brings together all the great classics of pastry from our childhood: four quarts, cake, apple pie, financial, slab of king charlotte etc. They are all there and there was even a few variations to try eg the cake with green tea. In addition, it reviews the preparation of different pastes pie and cream 'base': custard, pastry etc. The recipes are explained clearly and are easy to achieve. The result is very satisfactory and close to the beautiful pictures of the book! We are far pastry recipe books 'sophisticated' great leaders, but it is not the goal of this cookbook collection.
