Therefore I bestelllte me here the whetstone of Gräwe, mainly due to the many positive reviews here, because actually it should have a Japanese stone. And I did not regret the purchase. On Friday ordered, delivered Tuesday and also tested the same: my little cheap vegetable knife (used daily for apple cutting) did not wish to be sharper with the soaked stone, even another knife from Nirosta refused. But my 20 years old Fissler kitchen knife, and my Spyderco Tenacios EDC knife bite then fully on the stone, after a few minutes was a big difference in sharpness to notice in two!
Meanwhile I use actually only the 3000 side, as my most knives are still quite well sanded and only need to be deducted. The coarse grind I will continue to do with the 600 Diamond Sharpener.
The stone is beautifully appointed and also contributes fast Kllingenmaterial from, despite the fine grit. It is also pleasantly heavy, so the bamboo holder not really slip, this not only looks good but is also functional and sustainable, very nice!
I'll probably finally has set a 8000 or even 12000 Stone, because right (mirror), the cutting edges are blank so not really, or a strop, let's see.
From me anyway most recommendation for the stone, if it does not work, then it is rather on the (still) insufficient user technique or the cheap steel (probably not), and the more you practice, the sharper the knife, top! Good results are possible after a relatively short time!
