Supplement in July 2012: After more than one and a half years of use, this meter has become my everyday knife for cutting vegetables and meat. I use it every day now. It looks like the first day and has hardly lost its sharpness, so regrinding was not necessary yet. Conclusion: An unrestricted buy recommendation.
A little note on the side: It's worth the of Gräwe as "1 B-Stock & 2nd choice" designated goods to look closer. If one refers to the standard goods as "1A" goods and the "1" while "very good" conceives as school grade or defined, then it is in the "1B" - goods and to goods which is "very good". The errors are minimal, so in any case my experience in relation to the five different knives from the same Gräwe series I ordered (at half price).
Addendum on 12/02/2014: I bought this knife in February 2011. I have it still in daily use. From the edge of the knife is her right, after almost 4 years dull in any way, but not too spicy (razor sharpness for an everyday knife is not my thing, which requires too much concentration). A really good knife!
