First of all, I want to say I am somebody of course very positive and I had previously noticed anything below 3étoiles ... But I'm brewer engineer and I understand in general what I read in the field brewing, and there, I was stunned! I have no doubt of the validity or the right volontré of the author, but I regret that he has here as scientific facts proven and established, which is not altogether that tests he conducted in his garage on amateur brews. True, he did his best to approach a scientific approach, and I have no doubt that he is informed about wikipedia before giving scientic references (source cited several time ... I'm not kidding. ..), but some points are to places of scientific reality.
I will mention only the example of the rate ensemmencement, where he advises to cut into two brews, to seed a half and add the rest the next day, leaving yeast-half brew one night just to win 4In yeast.
