I have a kind of "bonus" to the new kitchen knives get this - saying I would have never bought the Japanese blade shape - and am thrilled. It really cuts down everything beautifully with the relatively straight edge, even the small chopping herbs without any problems. But what most impressed me is the sustainability of the sharpness of the knife. Regrinding was not previously necessary, every few weeks, I prefer the knife 3-4 times over the butcher steel and have immediately a really sharp blade. The processing of the knife leaves no wish unfulfilled. Overall, I was more than surprised by the quality in this price range, I can recommend the full diameter.
