This book, with its release of more than 30 minutes (The New Best Recipe) are my kitchen bibles. Inside, we find not only recipes are simplified, but also many explanations of basic operations in the kitchen, things "we dare not ask." For a beginner it is the bargain! Also, the path that led the authors to a particular recipe is explained as a story ("We tried with less flour, it did that, then with more flour, that made this so so meal c ' is better "). I love to read, we learn a lot of things that we use then when cooking "by feel."
