The temperature sensor will notice this and switches the heating element ("idle") - one always hears the switching operation as a click. This method is super easy and cheap and brings in itself fluctuating temperatures, because the heating element can indeed only "full throttle" and "idle".
Where is the problem?
Because it so be quick to write the manufacturer in the manual, which is to bring the regulator to position X and you should then wait 3 minutes for example.. Position X corresponds in reality, for example, 80 ° C target temperature of the water bath. The vial should but have only 37 ° C !! That's why you also have exactly the right time (which of course will vary)
the vial rausholen - otherwise it is after a few minutes around just as hot as the water outside - namely 80 ° C.
The water is around the outside only so much higher heating so that the heat faster into the bottle goes -> for me impractical and make all manufacturers so !! No wonder then that the food always has a different temperature or is too hot.

Workaround
The temperature adjustment knob up just enough so that the water around it assumes a temperature of 37 ° -> you have to measure yourself. Only then will take the heat but also a very long time. If you mix the food only, so you can always keep a bottle of water for example, at 37 ° C. Problem again: many times can you such low temperatures the device is not set because it always eg from 45 ° C and off you go for breast milk that is not practicable - or the regime is so bad that you can adjust the temperature never really. Bad luck!
The manufacturer would have a sensor directly in the vial place (such as in an oven with meat thermometer).

Alternatives:
Only, such a device does not exist (almost) !! The only thing that I know, that's how it works the Difrax bottle warmer - but has other disadvantages (see review).
Alternatively, there are devices that function like an egg boiler - these evaporate a certain amount of water, then the meal is warm - the hit rate is certainly not ideal, but at least the heating process is reliably stopped.
Keeping warm does not go with it, of course.
