The big problem that we encounter when we want to get into the dehydration of fruits and vegetables is poverty of available documentation! Those supplied with dehydrators are more about technical documentation than anything else. As for what is in the book ... well, it's a little desert.
The book by Linda Louis fills this gap a little. Some may criticize him for not deepen the "principles" of dehydration ... certainly, but it is not his goal! Not this little book puts you in the saddle through very simple recipes to make.
The book is organized into four chapters:
The chips of vegetables and fruits
Fruit leathers
Crackers
Biscuits and cereal bars
Each chapter begins with some technical advice and quickly we enter the heart of the matter to experiment with recipes.
Of all the recipes in the book, my big favorite is fruit leathers. Mashed banana added raw fruit (optional) to keep flexibility, a little sugar, all spread out thinly on the shelf drier and dried for several hours. This is just divine and addictive.
