In fact, these mats let you pass you with parchment paper for baking biscuits, pizza or any other recipe requiring cooking plate (in the oven). I have tested with shortbread. I put the mat on the oven rack, and then dropped my shortbread put into the oven. Well, I admit that I was not reassured but I assure you: my shortbread did not stick at all!
