Terms: first, documenting Evercut made the ad for the life of the blade and is especially sharpening. Then come the usual recommendations; use it on a cutting board, do not cut in a dish on glass or bone (and boning a chicken, cutting joints? This is a real issue), etc ... So I respected and continue to meet these requirements. The lifetime is "for life" or 25 years. With even ban self sharpen the knife. This shows the confidence in their product, Evercut.
Difficulty: the handle is a disappointment, the material (? Plastic) gives a not terrible, while the guard and blade are small onions. The blade is sharpened "V", which allows to cut right.
It see fine grooves (those of sharpening?). The blade bears traces that I took for the dust (or dirt from accumulating on the plastic when you unpack them, by analogy). After several cleanings and use traces are still present. May be due to dipping the leaf? This is unfortunate because the blade and the tool itself are beautiful.
In use, one appreciates sharpening, which is not a razor blade. It will not cut it when handling normally. Finally, no more than with another knife. But the edge is there. The micro grooves I mentioned give their effectiveness in cutting smooth products, such as tomatoes or eggplants. This is where I see the effectiveness of a knife: it catches and cuts without crushing. One can actually cutting thread accurately without needing to clogged gloves chainmail.
What I like: the product itself. Cutting quality, which we are more attentive to our actions. The storage box, whose bottom is magnetic, and there holding the knife (effective) when the ranks there. The cover even magnetized him that the closed posture. The magnets are powerful. It does not remove the knife easily. I take it as a safety point.
What I would have liked: a brighter material for the handle. Nothing reported on the grip, but just on the "cheap" side of the material used. A convenient storage box to have it always at hand, because the box flat, takes up space. Or a wall mount kit from said box (round down or up Channel down:? In case of mishandling, the hand closes over the blade when the knife fell But, against the edge. the blade is preserved. There would be a little something to improve into a wall mount).
A kit with a "small" knife? Because you can not always cook with a long and wide blade. Supplied with one or two small knives would be the perfect kit "for life". All in an ergonomic box, and secure (children) working with one hand?
Overall: The knife cuts, and that is what is asked. One can actually cutting thread. No worries to have. That said, it is guaranteed for 25 years. So I will complete my review by then ;-) The finish could earn more in the footsteps of the blade and the handle. Similarly, the storage box (it is advisable to always store it) lack of practice by the place it takes, and will deserve a little more ergonomic. Hence my 4 out of 5. Because considering the price of the knife, it must be beyond reproach. (Um, I'm VERY happy to test this product that said, we'll see if next year, the edge is always what you, as it seems to be a size of innovation).
EDIT: 2012-02 balance sheet after some time of use.
- Sharpening poses no problem. But I only use it for chopping vegetables, cutting slices of roast fish or slice. So I respect the manufacturer instructions, but it greatly restricts the use in the end.
- Rust blade, if allowed to soak.
- I have an impact in the blade, which remains fragile.
- Blade scratches if we cleaned with a scotch brite.
- The handle confirms its "cheap". The plastic handle (black) tends to thin.
Considering the price at which the product is sold, it is better to refer to a true damask for example.
