maximum allowable surface temperature to match.

*** Addendum after the "PizzAvanti" is now more than a year in use *** I increase my rating from 3 to 5 stars.
The "PizzAvanti" is an energy-saving option to our regular oven, the temperature scale is almost to's degree exactly
(Measured using an oven thermometer) and the internal temperature is very constant. Strong buy recommendation.
