Having stayed longer "in operation" have a 28er, and I have fully convinced the skills I have now resorted to a minor.
Both have in common is that really incredible non-stick ceramic coating. The Teflon colleagues there are after some time again the problem that make only small surface defects, which are then getting bigger and where the food to then remains liable. This must then resolve with gentle force.
In this pan "floats" the food to downright. I have so far (about 1 year) no deterioration observed. And I'm someone who does not necessarily carefully treats its appliances.
o I use basically a bit of margarine or butter for frying to medium temperatures, no oil
Why? For grease-Wi-frying the food to just a few places on the surface of the pan. There it burns even before the fat may separate from the fried food. The other parts are insufficiently supplied with heat and so, for example, just pan-fried meat is irregular brown.
Why no oil? Butter or margarine have a higher water content, which makes the fat a little lather. So you need relatively little additional fat and Bratengut is nevertheless uniformly supplied with heat.
o Unfortunately, I also use from time to metallic forks (of course carefully) or whisk (sauce)
So far, no detectable change at the surface.
o now and then "forget" I the pan located in the warm-up, so that the fat is a little brown already, or at least accept onion heavily coal-like appearance.
So far, no problem, even the onions are then not burnt, or can be still easily detached.
o I clean the pan in the rinse water
Note:
Now I have read in some reviews that the pan made of aluminum is made. If so, then the weight of the ceramic coating must come. It is much more difficult than similar Teflon pans.
Example 24 cm pan: Teflon 550g, 850g Neoflam (may each own remeasure times)
Also, I have read, the pan should be quite fast warm. Also I can not confirm. I have not measured, but the feeling that it is about twice as long to get as the Teflon pan.
