First, note that I give corresponds to 3.5 rather than 3. This book is comprehensive and beautifully illustrated, rather for beginners in plant food. Indeed, the author seeks mostly to recreate meat in conventional plant version (as it also explains in the introduction): you shepherd's pie without meat, chorizo seitan, tofu "scrambled" soy and other vegetable stew cheese. This is not disturbing in itself, but here more than 2/3 of the recipes are based on this principle. I find that unfortunate. So, the author uses much tofu, soy protein, and seitan, and there are few truly original recipes. Note still soft okara cookies, salty cupcakes tex-mex, lemonade strawberry tarts 100% apple-raspberry fruit and some other recipes.
