This book is very informative to know the basics and the process for making yogurt; but it does not focus on a very important stage of manufacture: mixing the ingredients - perfectly blending with a good whip for a while bacteria and disperses the results correctly is reactivated: right consistency of yogurt not need consult chapters too this, or too that; since I take the time to thoroughly mix the ingredients I never miss my yogurt, and I think that's the right way to really inratables yogurt !!
