Studied in the long term, food fears appear to be an essential element of the report to the corporate environment. the work of Madeleine Ferrières helps to overcome the clichés about the irrationality of the behavior of ancient societies and shows that our own attitudes are the heirs of a long tradition. While the effects of epidemics have long been studied, the influence of diet on health remains a great unknown. This anthropological approach opens up new research perspectives: it certainly says little about the reality of food hazards but it is a history of the values attached to common consumption or newer opposite. But this is an essential step to understanding such as agricultural choices, the organization models of urban supply or social relations as a whole.
