The aim of the game is, as possible to provide as a restaurateur as many guests (= points) perfectly within the timeline. But the players also want to and can by delivered a deferred guests (particularly unpopular: Guests with limited time or for which it has yet to attract a guest, gets or like a lemon ..) make life difficult.
