The Gärkörbchen of Birkmann is not suitable for baking, but only for walking or fermenting, so that the bread keeps the shape. The breads adapt very well and kept even after a fall on the sheet in the form as long as it is soon put in the oven. The breads get by the nature of the basket a corrugated surface, which, even after baking is visible at least with rye dough, which I've only tested it. In order for the bread slipping out well from the mold, it should be previously dusted generously with flour. Then it works properly. When the dough is however advised times very soft and moist, then remains ever something hanging on the basket. But that's no problem. Just let the cage dry and then let the little pieces dissolve dry. The Gärkörbchen one should according to accompanying manual, which is short but already informative, not wash out, which is why I always use the residual heat after the bread baking in the oven to disinfect it (max. 100 ° C). However, the processing of Gärkörbchens could not convince. So it has a very rough surface with many small protruding fibers on which you can safely quickly capture a sliver. In addition, mine was strewn in the supply with tiny wood chips, which cost a lot of time and effort to remove these. I have another Gärkörbchen by another company, which, however, has a very smooth surface and significantly cleaner arrived with me. Furthermore, I find the size specification very irritating. My pure rye bread were before, when they came in at about the 1000g from the oven. The Gärkörbchen is however in the dough for a 1000g bread already filled in, if it is not yet gone. This meant that these breads are often overflowed during walking. I found that this size of Gärkörbchens but ideal for a 800g rye bread. I think that in light breads heavier batters in this basket can be made because at least mine are more stable, which is why I use it no Gärkörbchen.
Conclusion In general, the Gärkörbchen is very well suited for rye dough since they like to diverge while walking and so keeping them in shape without problems in the leaching out of the basket to have.
