Since the opinions on this pan diverge, but I really like to use iron pans, I first ordered the small. First, I have baked as directed, which sounds worse than it is. Then washed with water and immediately made a fried egg, which is indeed a good criterion for judging. It has become properly, not be baking and beautiful brutzlig from below. So a pan must fry. Then again washed with water and very lightly oiled. They should never wash with detergent and certainly not in the dishwasher. That they should not be completely plan, I've not noticed, perhaps the greater. That would make me but also a little disturbing, because I have a gas stove, (which I have allowed myself again after 20 years of diverse ceramic hobs).
