But at some point I wanted to buy me a really sharp knife which also could cost something like. After lengthy research, I chose two candidates:
Ikon Classic (recommendation of many celebrity chefs) and Solicut (Test Winner Foundation Warentest)
Without further ado, I ordered both knives.
Positive much to me immediately the icon. It is great in the hand and is razor sharp. By contrast, the Solicut was nice, but not quite as sharp and not as beautifully shaped.
Satisfied, I wanted to put to the bread smear me then times. And the same as the first, I had to edit the difficulties some hard butter. Yikes? How come? Even when Solicut I had the problem. The blades were bent. STATEMENT ABOUT? I knew from my Nirosta not and in fact: Both blades were comparatively thinner than my supermarket knife ...
But also in the further handling I suddenly had problems which I previously did not know: My butter dish is made of glass and I was always afraid I could ruin the sharp blade. Scrape Even when inclined butter I had fear for the cutting. I keep the uncomfortable feeling to handle with a wallpaper knife: One wrong move and you cut yourself totsicher. :(
The blades of both blades are but of all first quality. The metal is beautifully finished and very hard. It was great fun slices of sausage, cucumber and cheese to cut. So for me, the icon has since narrowly outperformed, due to the focus and the feel in the hand. That Solicut has a somewhat more stable blade and gives a good feeling with harder stuff. What is preferred taste: The focus has to do with the angle of the cutting edge. Steep angles mean sharpening, however, are also more sensitive to lateral forces. The shallower angle, although less sharp, but it made me feel something to put away more. I do not want to know how down scrape Japanese knives butter. :(
But in my Endeffeckt Nirosta is easier to use. And even if it was not super sharp, so it has been for me not constant threat at the dinner table.
So Ikon shortly before Solicut. But I would have been happy with Endeffeckt two. And even with my good old Nirosta. :(
Conclusion:
Nice if you can drive a sports car for Aldi. But if you have to make it real every day, it is an old golf with the most happy.
PS Ikon series: Beautiful knife. Despite the disappointment in my application are the knives of the highest quality and I can understand the chefs who recommend them. They are super sharp and super handling. As a chef's knife is certainly top notch. I would opt for this series if I should even start a larger collection. ;)
