The authors chose to classify them by food recipes to replace and we thus find appetizers, dishes and desserts in each chapter, which does not facilitate the use if we want to compose a menu.
The recipes usually contain many ingredients, some not easy to find, such as liquid smoke I did not know.
In general I prefer to explore and marry the different tastes of vegetables, spices etc and see what happens, rather than seek to replicate certain tastes. This book is most useful to me in the second case.
