Before I got this knife as a gift, I have always worked with more or less cheap knives. The difference for this change was enormous. Rather than several cheap knife I use almost exclusively only this a good knife. I am aware that there are far more expensive and vrmtl. better knives are, but for hobby use it is more than adequate.
I use this knife since now more than 2 years and cook at least 1x per day.
The handle shape may seem counterintuitive, I was skeptical at first. After a few days acclimatization period, however, I found the grip to be very pleasant. Even after longer "average escapades" my hand is not tired.
However, the most important in my opinion with a knife is the quality of the blade. Out of the box has the knife cut very well, no comparison to my old knives. The edge retention is in my opinion very good. As already mentioned, I have the knife used almost daily for a year and it has held up well.
But as a knife demanded naturally adequate care. With 2 combination water stones, leather and a lot of practice the knife retain his sharpness. Blade protection and adequate storage provided.
However, the knife is not suitable for all applications because it is 24cm long and is too big for some things. But who gets on well with large knives, can safely access here.
