Fan of Marmiton collection, I am delighted this book
It is a beautiful work, colorful and very large, a format quite handy.
The recipes are arranged alphabetically. The book alternates ingredients, techniques and recipes implementing these ingredients or techniques.
It contains most of the classics, French or foreign, but more modern version and more accessible, with the variants proposed by the Internet (as in all the books in this collection): eg baeckeoffe, Basque chicken, Vichy cream, pudding black apple, apple strudel, stew, tartiflette, Strasbourg salad, socca niçoise, Tian of vegetables, artichokes barigoule sauerkraut stew with old, curry, cutlets Milanese, Landes cabbage soup, duck parmentier, moussaka Express 7 hours lamb, lasagna Bolognese, burbot Armorican, risotto with mushrooms, sweetbreads with mushrooms, Bresse chicken with yellow wine, paella, cod brandade, bourdaloue pear tart, carnival donuts, waffles North Kougelhopf, cat languages, madeleines, Marseille shuttles, pancakes, scones, porridge, etc ...
Hard to be Consise as the choice is vast.
All the recipes contain no illustration but those that have are enticing.
In summary, this book is a bible, if we were to only have one, it could be that one.
