Now, the comparison with the pan 30 cm:
- 24 cm is significantly lighter
- It is very well to the sweet crepes
- For pancakes (or pancakes) salted, it's complicated to put an egg unless the egg is really small!
The great interest for sweet crepes a smaller pan is that it allows a very water-rich dough (and / or low in gluten) while being able to return them without too much difficulty: with 30 cm large pancakes with a very high water paste (or very low in gluten) are a bit difficult to return ...
Compared to a coating pan, the interest is very clear: The stove can be heated to 200 ° C without any problem, allowing to make great pancakes. After, each his own: some prefer the elastic pancakes but I prefer them crispy but melting at the edges, in which case we can "settle" in a pancake-type Teflon coating ... On the other hand, Crêpes Mineral B can last for decades without problems as long as we maintain the minimum (that is to say, not to let them rust in a water bath for example).
Another advantage: you can use metal utensils really no problem.
Do not be afraid of rust, it said, just do not leave the stove moisture and oil lightly. And at worst, if there is rust (due to an oversight or other), simply scrape with a metal sponge and presto, it's gone.
Warning:
- The use of uncoated pans requires training and discipline: if you miss your pancakes, it means that we must change the way we do. For example, it is necessary that the pan is hot before adding the dough, or it may stick ...
- And do not heat up too high (200 ° C does not mean heat on high power without monitor temperature), otherwise it Crame, of course!
- Do not try to turn the pancake before the stove side is cooked, otherwise it is normal that it sticks ...
