This is the famous collection "homemade" by Hachette kitchen. It was clear explanations of all you need to know before starting (equipment, ice machines, basic preparations ....). Then the book is VERY full, ice creams, sorbets, granitas and frozen entrements, smooties. Very basic recipes like vanilla but also very original as mustard ice cream (to accompany meat). 190 pages clean a small price. A advisor.
