There are certainly sharper knife, the hair sample is not the Evercut knife. The edge retention is (since I used it) unchanged - especially tomatoes are indeed somewhat critical, with its pretty tough, hard shell. A dull knife crushes the fruit before it cuts. The reviewed knife is very confident: without much pressure arising tomato slices, even after copious cutting of pumpkin, carrots and bread.
My recommendation: for people who do not want to cut and spend their time with sharpening, the Evercut is a sensible investment. For the ultimate experience razor other knives are certainly better. The edge retention of Evercut knife is not reached by these knives but in my opinion.
Purification is carried out by the soft side of a sponge and a little washing up liquid plaster. After drying off and in the box again - the part is not for children.
Long story short: three months use, so far no decrease in sharpness recognizable.
