I really have tried a few recipes, including beef and (especially succeeded) a wonderful lamb loin. Especially the lamb loin it did to me, so I repeated it several times: The entire loin I vacuumed with pepper, sea salt, rosemary and garlic into slices and then at 65 degrees for (only) 75 min in Steba SV 1 cooked. After that very brief with the fat side in the pan or under the grill, it is wonderfully soft, pink inside and gently perfumed with the aromas of spices.
Of course, you have to realize that it is not done with the acquisition of the cooking alone, unless one already exists needs a vacuum sealer and the corresponding (stable) Sous-Vide bags.
